Time to Sleep – Day 16 NaBloPoMo 2017

Well, that was a ride and a half!

I’ve just submitted an 1800 word short story and 500 word exegesis for my Speculative Fiction assignment and I feel like I could sleep for a week. Unfortunately, there isn’t time for that!

Tomorrow (Friday here in the southern hemisphere) is the day I get to play music with The Superstars at Oak Tasmania, and we’re deep into preparation for a private function we’re performing at next weekend. These men and women are simply fantastic and I’m truly blessed to be able to write and perform with them ❤

Maybe I’ll be able to post some photos next week of our performance – I always love action shots 🙂

Meanwhile, there’s lots of gardening that needs doing over the weekend, a jam session at a friend’s place to go to and lots of new movies to see. I’m particularly keen to check out the Kenneth Branagh Murder on the Orient Express, Killing of a Sacred Deer, Loving Vincent and Jungle. Let me know if you’ve seen any of these films, I always like to hear other people’s opinions 🙂

The Annual Egg Glut Games – Day 11 NaBloPoMo 2017

 

Despite being mostly older ladies, my six lovely chickens are laying for all they’re worth at the moment. So, as we do every year, I’m giving away eggs to family and friends and making a lot of egg-based dishes. We’ve had custards and cakes, hard boiled eggs in salads and whole egg mayonnaise.

At the moment, I’m also suffering from a spring glut of salad greens – life is tough (not)! So, I picked a bunch of vegetables this morning and made a rich and luscious pastry-free quiche for lunch. It’s a very easy recipe and I often make it as a vegetarian meal as eggs are a great source of protein. But today, I added a couple of rashers of diced bacon, fried with garlic. It also works really well with cooked and shredded chicken, pork or cooked white haricot beans or chickpeas. I’d also recommend adding chopped fresh Italian parsley or chives, it’s really dependent on what you have on hand.

 

Deb’s Vegetable & Bacon Quiche (Serves 4)

 

6-8 free range eggs

2 cloves garlic, finely minced

2 thick bacon rashers

2 small leeks, washed and chopped (can be substituted with shallots or spring onions)

4-5 cups shredded green vegetables (spinach, silverbeet, kale, collards, rocket, pak choy, mustard greens)

1/2 cup milk (can be substituted with 1/4 cup cream)

1/4 cup plain (all purpose) flour

2 cups of grated Colby cheese (Cheddar would be fine)

1/2 cup grated Parmesan cheese

a little grated nutmeg

Method: 

Preheat an oven to 160 C (320 F). Dice the bacon and fry gently. Add the minced garlic towards the end, taking care not to burn it. Take off the heat and allow to cool. Whisk the eggs until frothy, grate in nutmeg, mix in the milk (or cream) and flour.

Using a fork or mixing spoon, gradually add the chopped vegetables and grated cheeses. Stir through the cooled cooked bacon, making sure everything is well incorporated and coated in the egg mixture.

Pour into a greased 20 cm (8 inch) souffle dish and bake for 45-55 minutes. This makes a soft-set quiche, but if you want it firmer, I recommend covering with foil and baking a further 10 minutes.

Serve alone as a light lunch or with a salad for dinner.

Garden Update – Day 8 NaBloPoMo 2017

Yesterday, I wrote about teaching Food Gardening so I thought it was only right and proper to give you all a little update on my own urban farm.

While it’s undoubtedly spring and the soil is starting to warm, I suspect my patch is about two or three weeks behind where we were last year. Raspberries were setting fruit this time last year and I was getting ready to lift the main garlic crop for curing. At the moment, all the berries are only just flowering and the early garlic (my main crop) is nowhere near ready yet. Nevertheless, there’s bright spots – it looks like I’ll get my first Tayberries this summer ❤

Also, we’ve had a rough entry into spring, with very warm weather followed by snow and a few very cold nights in the past month. This didn’t seem to hurt my young apricot tree, which has quite a few fruit on this year. The plum an nectarine are loaded and I’m thrilled that my pollination plan with my 2nd year dwarf apple trees worked a treat. All four trees are looking incredibly healthy and all carrying fruit. I’ll be thinning it pretty drastically to encourage stronger trees and discourage biennial fruiting but I’m very, very happy to be finally looking at a few home grown apples at the end of summer.

Because of the up and down weather, I haven’t planted out this summer’s tomatoes yet, but I decided to grow them on a bit longer in folded paper pots. It’s a really good way to use up newspaper and come planting time (this weekend I hope), I can put the whole thing in the ground and avoid transplant shock.

As you can see above, I mark the plant name and the date they were potted up as I tend to lose plant tags. If anyone’s interested, I’ll write up some instructions on this great little paper recycling tip.

In the meantime, the zucchini’s are in the ground (most of them survived the cold) carrots are starting to size up, the late garlic that I’ll be lifting in the new year looks fabulous but a good deal of the early garlic that I normally dig up in November looks like it’s rotted in the ground. Incredibly distressing! Also, the Snow Peas were decimated by slugs this year but the potatoes are looking great.

Through it all, the chickens just keep on laying eggs! Considering most of my ladies are quite elderly (4 years and older) they really are quite remarkable and I’m struggling to keep up with them!

So that’s all for today – I’m off to bed early tonight as I have to do my six monthly blood test tomorrow morning and I’m helping out with a fencing job afterwards. Sometime tomorrow I have to make bread, write a story draft for uni, do my prep for teaching work on Friday and maybe do some catch up with weekly work for uni. (I’m tired just thinking about it!)

Passing on the Passion – Day 7 NaBloPoMo 2017

Every Tuesday morning, I teach Food Gardening to folks out at Oak Tasmania. It’s one of the best jobs in the world, sharing my passion for growing fresh food with eager participants and switched-on staff. We have two worm farms that take all kitchen scraps from the building and a small vegetable bed that we’ve been working on since the start of the year, and it’s become very productive. After doing some soil tests, we realised we had to do quite a bit of work to lift the pH (it was too acidic for a lot of the vegetables we wanted to grow) and with a bit of research and effort, everyone pitched in spreading dolomite limestone, and we’ve started getting some excellent results.

Apart from learning basic horticulture skills, the participants are growing fresh vegetables for a Cooking program one of my co-workers runs on Wednesdays. So we like to test things out on Tuesdays and learn how to make things too. Most of the folks in my program don’t have gardens but they are fabulous, instinctual gardeners and really great cooks, which I believe most of us are if we’re given half a chance.

Today was stunning! We harvested our first broad beans, some celery stems, a veritable mountain of silverbeet (aka Swiss chard), Cos lettuce and one huge head of garlic. It was a little early for the garlic, but it was a good lesson for the team to learn – and we have quite a few more heads still in the ground.

Together, we got a production line going, washed and prepared the silverbeet, finely chopped a few stems of celery and lightly roasted the fresh, whole garlic head and its fleshy stem in a little olive oil. While we were waiting for the garlic to cook, we opened up the luscious beans and scoffed the lot! They were so delicious and fresh!

Once the garlic was soft, we smashed the whole thing – head and stems – removed the thick, uncured skins, chopped the garlic finely and fried it in a little seasoned olive oil with the fine chopped celery. Finally, we threw in the roughly chopped silverbeet, covered it to sweat down for a few minutes and made sure it was all smothered in the wonderful, rich, garlic flavoured oil.

We served it in a bowl at our section’s lunch table and we could’ve made twice as much! The Cos lettuce and the rest of the celery are being used tomorrow as a salad accompaniment for a Pizza making session – which makes me wish I was out there again tomorrow!!!

Sick Day Blues – Day 5 NaBloPoMo 2017

Well, best laid plans and all that jazz……..

I was supposed to go out to the wonderful MONA today for a special lunch with a whole bunch of female musician friends but no such luck 😦

Last week, I got a Whooping Cough and Tetanus booster shot from my GP because there’s a very small and extremely precious brand new member of our tribe I want to hang out with. My doctor warned me I might have some pain from the Tetanus part of the deal and it would hang around for a few days. Yep, he was right on all counts – but I’m sure it will be worth it!

When I got up this morning I had trouble lifting my arm above my shoulder, so hanging the washing out was pretty hilarious – not! Combined with very little sleep last night, I feel utterly wrecked today, so I’ve decided to rest up so I can make music tomorrow with my friends at Oak Tasmania.

Meanwhile, after wrestling with the clothes, I found some lovely bits around the yard that made me smile. I live in a fairly moist climate and there’s always water in the garden for bees and native birds. But because I breed rabbits, I try and avoid mosquitoes as they carry some truly awful diseases. So, I got some tadpoles from my friends Josie and David and was really pleased that they’re thriving in a tub I eventually plan to turn into a wicking barrel. I spotted some fat little chappies this morning, feasting on mosquito larvae 😀

And over near the chook house (aka as Frankenhutch) I drank in the heady perfume of lemon and lime flowers ❤

The lime in particular is thriving, after surviving the Tasmanian winter and after the flowers have gone, I plan to leave a couple of flowers and see if we can have a few fresh limes next year.

I’m resting up now, dinner’s in the slow cooker (Beef and Bean Curry) and I’ve movies to watch and uni work to do.

Spring Chicken – Day 3 NaBloPoMo 2017

The weeks are flying by now and the year is almost done. We’ve moved over to Daylight Saving Time last month, and the days are noticeably longer. Nevertheless, there was snow on Mt Wellington/kunanyi this morning. It made me very happy I held off planting the tomatoes last week!

In so many ways I feel I wasted the long evenings of winter with study, books and too much YouTube! It’s depressing. I had so many plans for sewing and handwork projects, seed sorting and trying some different recipes but so little seems to have come to fruition apart from the seed saving. Looking on the bright side though, I do have very good uni marks and jars of saved vegetable seeds!

A couple of months ago I got lucky, splurged a little and finally bought a food processor. As someone who’s serious about food, I’m almost ashamed to say I’ve never owned one but I could never justify the expense of something decent, so I stuck with my old blender and a good set of knives and whisks. But a friend had a Kitchen Aid her son bought and never used, complete with a case overflowing with attachments and at a very reasonable price. It was a very VERY good idea!

The first thing I made with it was a main course that looks harder to make than it is. The food processor makes easy and quick work of mincing the meat but as with all these kinds of stir fries, the trick is to have everything else chopped and ready to go before you start cooking! I used a lot of fresh vegetables from the garden for the rice (broccoli, silverbeet, spring onion, mustard greens, kale, orach, over-winter carrots and celery) but I suggest you play around with it and use what you have on hand. I also used one of the first lemons from my little tree, eggs from my hens (who insisted on laying through winter, bless them), some of last summer’s garlic crop and home-grown dried chillies.

Spicy Chicken Patties with Enriched Fried Rice (Serves 4-6)

 

Spicy Chicken Patties

2 skinless chicken breasts

1 onion

Thumb of ginger *

1-3 cloves garlic (to taste)

1 fresh lime or lemon

¼-1 teas dried chilli (to taste)

1 tab sesame oil

1 tab Chinese cooking sherry

1 tab plain flour

Flour for dusting and a little oil for cooking

*Don’t laugh – I use my thumb to measure fresh ginger and find it’s surprisingly accurate! From the tip of my thumb to the first joint is half a thumb, to the second joint is a full thumb.

Method:

Peel and quarter the onion, peel the garlic clove(s), peel the ginger and put in the food processor bowl. Pulse until chopped. Cut the chicken into chunks and add to the processor with the chili, sesame oil and cooking sherry. Carefully pulse so the chicken is a fine mince. Turn the whole mixture into a mixing bowl, grate in the lime or lemon zest and squeeze in the juice. Add the tablespoon of plain flour (All Purpose flour to my US friends) and mix well. Cover and refrigerate for at least 1 hour for the flavours to develop.

Heat a heavy based pan with a little oil. Put a little plain flour in a shallow bowl. With damp hands, form the chicken patties into small balls. Coat them in the flour and fry them over medium heat for a few minutes each side until cooked. Keep warm while you assemble the Fried Rice.

 

Enriched Fried Rice

1 cup long grain rice

Water to cook

A little oil for frying

1 onion, sliced

2 cloves garlic, crushed

½ thumb ginger, finely chopped

1 tab soy sauce

1 tab sesame oil

1 teas dried chilli

2 eggs beaten in a bowl with a few drops of soy or fish sauce

2 cups hard vegetables chopped (carrot, broccoli florets, celery, mushrooms, snow peas, etc)

2 cups soft greens shredded (spinach, silverbeet, mustard greens, orach, parsley, coriander, kale, etc)

Method:

Cook the rice by your favourite method while you get the flavour base started and the Spicy Chicken Patties cooked. (My favourite way of cooking rice is the absorption method in the microwave.)

In a large heavy pot, heat a little oil, add the garlic, ginger, onion, chilli, soy and sherry. Keep stirring over a medium heat – don’t let this burn! Once the onion is translucent, add the hard vegetables and cook a further minute. Add the cooked rice – it should be about 3 cups now – and the sesame oil. Stir it thoroughly. Add the beaten eggs and keep stirring, making sure the egg mixture coats every piece of rice and vegetable. (If it starts to stick, take it off the heat, keep stirring and add a teaspoon or two of water.) Add the soft vegetables, take off the heat and stir them through.

Serve immediately, garnished with some fresh chopped coriander, flat-leaf parsley or spring onion greens – or all three!

The verdict was pretty clear – the Kitchen Aid is a winner! I think it will really come into it’s own once this summer’s crops come in. Processing cooked tomatoes for Passata, basil, garlic and olive oil for pesto base, juicing lots of citrus fruit for bottling syrup and beating egg whites for fresh berry pavlova will be much, much easier 😀

Friendship, Food and Music

Hello friends,

It’s been quite a few weeks since I’ve posted anything. Yes, I think I’m slack too, but I’ve been fairly snowed under with work, a nasty stomach bug and (as always) constant study and assignment deadlines!

A la Game of Thrones, winter isn’t coming – it’s well and truly here! At least winter had the good grace to wait until Dark Mofo had finished before settling in properly. And the colder weather’s brought some very icy mornings and plenty of work to do around my little urban farm. I’ve been weeding beds, transplanting lots of volunteer greens that that have sprung up and covering as much as possible with spent straw from the rabbit hutches. It looks like it’s going to be a really good crop of garlic this coming summer and I can’t wait to see how the later varieties fare in my microclimate. We’ve enjoyed the first few lemons off my tiny tree and the Blood Orange, Lime and Valencia are both surviving the cold weather so far *crosses fingers*

I’m waiting on another order of fruit trees on dwarfing rootstock that I’ll be putting up into wicking tubs like the apples last winter and trying to clean up the last of the chestnuts’ spiky husks and collect all the leaves for compost. I confess I’ve been putting off stripping out the greenhouse in preparation for spring. It’s such a big job and something of a domino effect – once I start, I can’t stop!

I was thinking about tackling it this morning but a visit from some friends saved me 😀 Matt was interested in trying one of my farmed rabbits to eat and arranged to call around with Robyn (another musician friend). Being winter, I had no fresh kits but had one in the freezer from the last litter for him. Robyn and I found about 500g of good chestnuts from two large buckets of spiky husks and I gave her and Matt fresh eggs, herbs and a jar of crabapple jelly for Matt’s elderly mother. We drank coffee on the balcony in the winter sunshine, discussed music, books and life in general.

Matt and I have known one another for many years and today was a delightful catch up. (We recorded “Clementine”, a song of his last year but I’m not sure when it’s going to be released!) He’s in the process of recording again and wanted to borrow my electric 12 string guitar (affectionately known as Dean), which I was happy to do. Meanwhile, I’ve been toying with buying a flat-back mandolin for playing in live sets and was utterly blown away when he gave me this today, saying it was just lying around, not getting played….

I’ve been tinkering around with it most of the afternoon and I think it’s going to be a fabulous addition. And I’m sure every time I play it I’ll think of my dear friend – I might even have to write him a song ❤

A Fool for April – Muesli Recipe

Chestnuts!

Happy April Fool’s Day! Well, there’s been a notable shift in the weather here, summer is clearly over and autumn is finally properly with us. I think this is my favourite time of the year, with generally lower overnight temperatures, crisp mornings and calm, often sunny days – perfect for gardening!

Soil temperatures are still quite warm – there’s a lot of growing still happening! – and I’ll be picking zucchini and especially tomatoes for bottling for a little while yet.

In the meantime, I’m madly preparing beds for kale, broccoli and garlic, which I’m planting in the coming weeks (later than usual for me), so it’s still very busy. Boudica Bunny is making a nest and should birth her kits (the first with Bernard Black) in the next week, the chestnut crop is still to come as you can see from the photo above, and the chickens are beginning to moult too so the egg supply is gradually slowing down. Having a mixed flock means that there’s usually someone laying and I rarely have to buy eggs except in the very middle of winter when day length is shortest.

Also, I’m pleased to say the jam melons are starting to get bigger – I haven’t grown these since I was a kid in South Australia and it’s exciting! I’ll keep you all up to date with what I end up doing with them, but I’m thinking Melon & Lemon Jam 🙂

Recently, I made my version of toasted muesli, something I love this time of year, after the summer and autumn fruit drying is mostly over. Many recipes call for added oil, honey, corn or golden syrup and even peanut butter, but this is completely unadulterated. For me, the dried fruit provides enough sweetness and means the muesli keeps well in an airtight jar. If you need it you can always add a little honey, syrup or even a spoon of jam when serving. Personally, I love this with just a dollop of home made yogurt. Here’s the recipe:

Deb’s Sugar-free Muesli 

4 cups rolled oats (ordinary oats, not the “instant type”)

1/2 cup sesame seeds

1/4 cup pumpkin seeds

1/4 cup sunflower kernels

1/4 cup wheatgerm (optional)

1/2 cup coconut (I prefer flakes for this)

* 1/2 cup chopped nuts (use what you have on hand, for me it was almonds this time and see the note below)

1 tab fresh lemon zest or 1/2 tab dried lemon zest (optional)

1-1/2 cups of chopped dried fruit (again, use what you prefer or have on hand!)

Method:

Pre-heat an oven to 160 C/325 F. In a large bowl, mix the oats, seeds, wheatgerm (if using) and coconut. Chop the nuts fairly roughly and add to the oat mix.

I love lemon zest and the sherbet-like flavour it brings to my breakfast muesli (I keep a jar of dried zest in my pantry cupboard just for recipes like this) but it’s not to everyone’s taste. Try just a little if you’re uncertain.

If you use dried lemon zest, you can mix the chopped fruit thoroughly with the oats/seeds/nuts now, bypassing the toasting step and put the muesli in an airtight jar but I really think the toasting is so worth it for bringing out the flavours of the the seeds and nuts.

Lay the oats/seeds/nuts/fresh lemon zest evenly on a baking sheet or roasting pan and toast, turning every 10-15 minutes with a broad spatula. It’s fiddly but really worth it as you can determine exactly how toasted you want your muesli to be. I use coconut flakes that brown quite significantly and are my best indicator. Now for the dried fruit – the real star of this recipe – and where you can make it truly your own, with seemingly endless combinations of sweet, luscious, fruity goodness! Chop the larger pieces of dried fruit to a size that you prefer (I like mine fairly small, about sultana size). For this batch, I had a lonely piece of apricot fruit leather that needed using, plus this year’s prunes and dried nectarines. Kitchen scissors worked really well and I find them much easier than a knife for this job.

When the oat mix looks the right shade of toastiness, allow it to cool completely, mix in the chopped dried fruit very thoroughly and put into an airtight jar. It should keep well for ages but mine usually gets eaten in a couple of months.

*A note on the nuts. If you don’t like/can’t eat particular things or want a nut-free muesli, be bold and take them out of the recipe! Substitute nuts with more seeds and fruit – it’s entirely up to you and I encourage you to try different things. For instance, my muesli usually has linseeds but I didn’t have any in the house when I made this (sad face). Next time, I should have dried apples and some walnuts to add as well as my beloved linseeds and I might add a touch of ground cinnamon for a slightly different combo 😀

In other news, The Superstars and Callum are playing at MONA next Saturday (8th April), which is huge news and I’ll do a separate post about that soon. Uni study is relentless but rewarding, and I’m loving my current unit CWR211 Writing Crime & Contemporary Romance, though romance literature isn’t my strength or preference. Nevertheless, I managed a very high mark for my first assessment and I was frankly, surprised and thrilled.

Finally, I’m sorry to say that Felicity lost her battle with cancer earlier this last week. While her death was entirely expected, it was still utterly heartbreaking and my thoughts go out to all her fabulous friends, family and especially her husband Dave. I plan to buy a shrub or small tree in the coming weeks to plant in her honour – a “Felicitree” ❤

Aioli – The Love Affair

Hi everyone,

I just posted a pic on Facebook of a batch of Aioli I made this afternoon and one of my friends asked for the recipe. Easy done I thought, I’m sure it’ll be on my blog somewhere – but I couldn’t find it! High time I rectified this incredible oversight!

I’m not a true mayonnaise connoisseur like some of my friends and in truth, I rarely eat it. I do like to make this however in summer and autumn, when eggs are plentiful and garlic is still fresh and pungent. And I dug late potatoes this morning, a Dutch cultivar called Patrone that are apparently a fabulous salad potato. I’ve never grown them before, so this week will be full of interesting taste tests 😀

Home grown/made potato salad and Aioli is one of those dishes that is sex on a plate, everything about it screams wonderful. The texture of the potato cubes, their earthy flavour against the rich, creamy Aioli, with the pungent garlic and the lemony tang at the finish. You get the picture? This is love! And I make this only three, maybe four times a year, when everything required is in season.

So, here’s the Aioli recipe. Please bear in mind several things. Firstly this uses raw eggs so always get them from a reliable source and be assured they are fresh. Secondly, that I make this by feel and taste and recommend that you do the same. I used 8 eggs for this batch as I’m giving a pot to a mayonnaise-obsessed friend too. My rule of thumb is a clove of garlic per egg yolk and it works well for me. The finished Aioli will keep for a week in the refrigerator, though it usually disappears very quickly at my place!

Egg yolks                  Fresh minced garlic             Olive oil                 Lemon juice           Salt

In a clean bowl separate the eggs (I freeze the whites for later use in baking). Crush, peel and mince the garlic (I sprinkle a little salt on the crushed, peeled cloves and mash it in with the flat of a cook’s knife, making a particularly fine mince). Add this to the eggs and beat them well until they’re frothy. Here, you can use a hand beater but I prefer a balloon whisk.

Very slowly add the olive oil while beating the egg mixture. A thin drizzle is best – you really don’t want this to split! (I put a teatowel on the bench to stop the bowl from flying away too). For my 8 egg yolks I used  a very generous cup of my Basil Oil for an extra summery note but any good extra virgin olive oil will be fine. Keep beating until the consistency is like thick cream. Once you’re happy with this, start adding the lemon juice. I recommend beginning with half a tablespoon per yolk and do a taste test. Adjust as needed and add seasoning if you want. Pot up, label and refrigerate immediately.

Apart from making the sexiest potato salad dressing in the world, this is wonderful with chicken, fish, green salad and as a dipping sauce.

Addio Estate – Harvest Time

It’s that time of year again, the beginning of autumn when the bounty of summer comes in. And like so many of us who grow our own food, I’m feeling a bit inundated at the moment!

So far, I swapped some of my egg glut for a bag of crabapples and elderberries for jelly making; pickled and dried nectarines off our tree; dug and bagged potatoes (and I’ve still got more in the ground); eaten and dried so many beans; vainly tried to stem the attack of the killer zucchinis; dried enough prunes for the coming year but still the kitchen looks like it’s overflowing with plums now I’ve finally got the last of the fruit off.

Then there’s the tomatoes.

Some of you might recall I talked about some volunteer Roma tomatoes that survived winter in the worm farm and germinated in November. Well, quite a lot of them came up in one of the wicking barrels! I thinned the plants out and over the last month picked about 4 kg (just shy of 9 lb!) of perfectly delicious tomatoes.

Summer has been a very mixed bag here in Tasmania with much cooler temperatures and more rain than usual, and it seems we’re getting more balmy weather now that we’re officially into autumn. Everyone’s been complaining that tomatoes are slow to fruit, smaller than average and so on, but I think the flavour has been outstanding!

I don’t normally grow a lot of tomatoes but I decided to go for it this summer so I could bottle fruit as it ripens for use in winter stews and curries. This is reflected in the varieties I chose – Principe Borghese, San Marzano, Polish Giant and Debarao. These are all in various stages (the Debarao are still flowering) but I did bottle the first kilo of San Marzano this week and they are fabulous!

I didn’t factor in for the Roma crop (it was quite a surprise!) and that’s come in earlier than the rest. So I decided to make that wonderful Italian pantry staple, Passata. It’s kind of like making your own pasta sauce, totally to your taste and giving your winter meals a touch of those sun-kissed summer days.

Three things to note before we start. Firstly, I don’t blanch and peel the fruit for this as it takes a lot of time and basically I’m lazy. (In truth, I’d just blanched a couple of jars of small San Marzano tomatoes for bottling and was running out of time that night). Instead, I put the whole thing through the blender and the skins break down beautifully doing it this way. Secondly, I used a combination of Basil, Marjoram and Oregano because that’s what I had close at hand and we love those flavours. Sage, Thyme, Italian Parsley and even a little Rosemary would be just as good. And finally, this recipe uses chilies – another fruit I have in abundance here! – but it’s just as delicious without them, so don’t feel compelled to use them 😀

Deb’s Chili Passata

2 kg ripe Roma (or any plum-type) tomatoes             1 onion, chopped

1 head garlic, peeled                                                         6-12 chilies, chopped (optional)

2 tabs basil oil                                                                   ½ cup fresh basil

¼ cup oregano &/or marjoram                                     1 tab honey

¼ cup minimum Marsala or red wine                           salt to taste

Wash the tomatoes, remove any stems, bruises, etc. Put them in a large stockpot with the oil, garlic cloves, honey, onion, wine and chopped chilies. Heat slowly over a low heat until the tomatoes start to sweat and mash down. Stir occasionally but leave the lid on as much as possible.

Add the fresh herbs and continue cooking until it starts to look like a tomato soup. Season it to taste. Take off the heat, cover and leave overnight.

The next day, put the cold tomato mix through a blender and pulse to the desired consistency. Clean and sterilise jars/bottles and lids/tops. Put the blended mixture back into the stockpot and reheat. Boil gently for at least two minutes. Take off the heat and prepare a tall stockpot for a water bath (or Fowlers Vacola or Ball canning/bottling vat).

Ladle the hot Passata into sterilised jars, add ¼ or ½ tsp of citric acid to each jar, cover securely with sterilised lids and place in water bath. Bring the water up to the boil and hold for 20 minutes with the lid on. Turn off the heat and leave the jars to continue processing for another 15 -20 minutes.

Remove the jars carefully (they will be very hot) and put them on a board to cool. Check for a seal, label and store in a cool place. This will last unopened for up to a year but mine never lasts that long!

This recipe made just over 2 liters and can be bottled in smaller jars as well – I just have lots of swing top bottles this year!
