No Rest for Gardeners! – The Truth About Growing All That Food

The uninitiated – that is, non-gardening friends – often say things to me that make me giggle. Things like, “you must be glad it’s autumn, you won’t have to be in the garden so much”. It got me thinking though that my busiest times are usually spring and autumn, preparing for the frenzy of summer and the hard graft of winter, when I’m more inclined to do heavy building work to keep warm, while trying to grow winter food. I feel there’s always things that should be done no matter the season and, dealing with a physical disability, things that I have to take a long view on completing.

One such job has been The Corner of Shame. I think every largish garden has one, that back corner, usually furthest away from the house, that gets overgrown and forgotten about because there’s so many other things that take your time and attention before you can walk that far! Well, after months (literally) of chipping away at it, my Corner of Shame is no more!

The picture above shows the now Corner of Care that was started as a long term project by two of us in November last year. I had to get a second load of pine bark to finish top dressing around the plum tree and opted this time for the fresh rather than the composted, darker mulch. Also, I’ve planted an English Lavender (in the bottom right corner of the photo) and started pruning the plum tree. The netted area is half a huge bed that I left fallow for a season and built up with compost from the chicken coop, spent straw from rabbit hutches and a few good handfuls of dolomite.

Last weekend I planted leeks, silverbeet (chard), celery and some bunching broccoli in there and this weekend I finished it off with garlic. Next weekend, I’ll be doing a similar netting job on the other side but I’ll be waiting for a few more weeks for the next round of seedlings to be big enough to plant out.

The two nursery trays above (ten punnets of winter vegetables and ten of onion varieties) were planted on March 8th, only six days ago. This morning, nine of the winter vegetables were up and big enough to handle and six punnets of the onions. Hopefully, I’ll get some time during the week to prick some of the kale, savoy cabbage and endive seedlings into toilet roll grow tubes and get them ready for planting out across five beds before the soil starts cooling off!

The other long term project I’ve brought to a close in the last few weeks has indeed been a labour of love. My all-time favourite vegetable is asparagus and at the beginning of spring, I took the plunge and planted some seed rather than wait until winter and buy (in my opinion) very expensive crowns. Asparagus seed is notoriously difficult and has a very short shelf life but either I chose well or got lucky – probably a little of both!

I ended up with 51 asparagus seedlings!!!

So, a dedicated bed had to be found, dug over, built up and dressed with sea grass – and quickly! I decided to use the bed that had garlic in last year and started the preparation in November, almost as soon as I’d lifted the huge heads. Digging is something I generally avoid these days because of my spine and arthritis unless it’s absolutely necessary – and this was necessary! It took up until the end of December to dig the previous mulch in, feed with copious amounts of sheep poo and mushroom compost, throw some dolomite over it and dig it over again. Then I covered it all with some sea grass I gratefully accepted from extended family who want to be paid in asparagus – long term investors! Then I left it to settle and every time I watered the garden, I spent some time watering the sea grass to remove the excess salt and stop the bed drying out completely. In the meantime, I spent quite a bit of time teasing out the little seedlings into individual grow tubes as you can see from the picture below.

Finally, a seriously diseased cherry tree had to be taken out from behind the bed before I could plant my babies out. Thanks to my wonderful son and other family members, I had some help with this and didn’t do anything my doctor wouldn’t approve of!

And then, at last I started planting these precious little seedlings out. It took me a few weeks to get it all done but they’re doing well – all 51 of them!!! At the moment they’re very tightly planted but as the crowns grow I’ll take over the rest of the bed and give them more space to grow. Asparagus is dioecious – it has male and female plants – and I’ll be removing most of the female plants as I work out who’s who. Male plants don’t have to expend resources to produce fruit, so can crop up to three times more than a female plant.

Now all I have to do is top dress with more sea grass, manure and spent rabbit straw at the end of this winter and the next. If I’m lucky and careful, I should be able to take one spear from each that spring and by 2018 have my first crop. Asparagus will produce good crops for around 20 years. It will be worth it 😀

Boxes and Bounty

As a gardening experiment last month, I made a few wicking boxes for my front balcony. It faces east, across the River Derwent and while the view is lovely, it gets all the morning sun and can be quite windy. This time of year, we can’t walk on the concrete in bare feet before 2pm! I’ve grown salad greens in containers out there since I moved in, over six years ago but it’s a lot of work and difficult keeping water up to them with baking sun and drying winds.

IMG_20151215_102432I started out buying two food grade plastic crates from my local hardware store (I think they were 23 litre size), the kind that are often used as recycling boxes. All other materials were either recycled or things I had on hand.

Old hose was spiked with holes and laid in the bottom, with the refill end slotted into a length of larger diameter poly pipe to make it easier to pour water into. It looks pretty ugly but it works!

Next, I put a layer of gravel over the hose, making sure the refill end IMG_20151215_102947didn’t get buried as you can see in the photo. By the way, this gravel wouldn’t be my ideal but it was sitting in a pile begging to be used up and there was just enough to do all the boxes 🙂

At the top of the gravel, I carefully drilled a small overflow hole diagonally opposite the refill hose. This means water won’t build up and start getting smelly and the plants won’t rot in overly wet soil.

IMG_20151215_103048Next, I covered the gravel with some old tea towels that weren’t really wonderful for wiping dishes anymore. They allow the water to pass through but not the soil. Eventually, they will rot away and I’ll have to replace them but it was good to recycle them. Old shade cloth would be ideal if you have it.

At this stage, I put a thin layer of good quality potting mix over the top, and I recommend not cutting any corners with this. The better the soil, the better the plants! I mixed well rotted sheep poo and plenty of mushroom compost in large bucket and worked this through layers of potting mix until the box was fairly full. The result was a friable, rich mix, perfect for quick growing summer salad veggies.

I made sure the soil was damp before planting out the first seedlings and watered them overhead for the first couple of days, until the water reservoir started to do its thing. I ended up doing eight boxes in total and crammed in fast growing Pak Choi, Portulaca, Red Amaranth, Grumolo Verde Chicory, Garland Chrysanthemum and even Silverbeet. The results have been fabulous

The pic above was taken 15th December 2015 and the pic below a month later, the 14th January 2016. The results have been incredibly successful and I’m only having to refill the reservoir about once every three or four days instead of overhead watering morning and night. Despite the fact salad is my favourite meal of the day, I can barely keep up with the amount of food these boxes are producing!

Shiso and Cider Vinegar – A Heavenly Match

Over the years I’ve grown quite a lot of that most wonderful annual herb, Perilla, Shiso or Beefsteak Plant. Traditionally, it’s found in Korean, Japanese and Vietnamese dishes, and Shiso is its Japanese name. In particular the green variety (Perilla frutescens) which I prefer, seems to like my greenhouse very much. The unusual aroma and flavour is a welcome addition to summer salads in my household. Flavour-wise, I think it plays a similar role to Basil in Mediterranean dishes, and it is sometimes sold as Japanese Basil. I just wash the leaves thoroughly, put them through the salad spinner and chiffonade them. We also love it as a flavouring for steamed rice and stir fries and the whole leaves for tempura.

This year I’ve had a fabulous crop and I began to wonder what else I could do with it. That got me thinking about other Japanese flavours and what would happen if I started experimenting with a pickle. In Japan, Green Shiso is salted and the whole leaves are layered in jars for use during the cooler months and the Red Shiso is used to make Umeboshi but I found a wonderful cucumber recipe at Food52 that I’ve adapted for my needs. I wanted to have pickled leaves I could use whole as wrappers or shred up as required and this looks like a winner!

I made this yesterday 🙂

Refrigerator Pickled Shiso

15-20 large Shiso leaves           1/4 cup sugar                       1 tablespoon salt

3 tablespoons Mirin                1 cup Apple Cider vinegar       A clean pickle jar and lid (300-400g)

Wash the Shiso leaves carefully to remove any grit, pat dry or put through a salad spinner to remove excess moisture. Lay the leaves on top of each other and very carefully roll them, feeding the entire roll into the jar. In a non-metallic mixing bowl whisk the other ingredients thoroughly until the sugar and salt are dissolved.

Pour this over the Shiso leaves, close firmly and refrigerate. This will be ready to use in a few hours but will benefit from leaving for at least a couple of days. I have no idea how long the leaves will last in the refrigerator but as I use a few and make room, I plan to add some thin slices of the little cucumbers that are starting to fruit.

I confess I took a nibble this morning and it’s as wonderful as I hoped it would be. The big factor for me is the flavour of the pickling liquid, which is very similar to a dipping sauce. Also, I used some of the vinegar I made from a failed cider about three months ago and it’s pretty special just on its own! I will write a post about processing the vinegar with details and photos soon.

I’m also planning to dehydrate some of the crop, grind it and mix with a little shredded nori and toasted sesame seeds to make my own furikake and I’m considering getting a fermenting jar and making Korean Gaennip Kimchee. There’s also an idea brewing in my mind about making Shiso oil, similar to the Basil oil I make relentlessly through summer. I’ll keep you posted on that 🙂

Meanwhile, I’ve finished and submitted my assignment and I’m back to my wonderful people at OAK Tasmania tomorrow – summer holidays are over for me. But the days are still long and luscious for gardening and cooking.

The Last Gig of 2015

Hi everyone, it’s been lovely to have a break from blogging but I’m itching to write again – there’s been so much going on!

It’s the busiest time of year for me in the garden – I’m planting out heat-hardy salad vegetables like mad to take advantage of our brief but often vicious summer. There’s been several kilos of fruit off the raspberry canes already and several more to come, basil is being cropped, cucumbers, tomatoes, zucchinis and chillies are starting to ripen. On top of all this, I’m making some small wicking boxes this week for the front balcony, which gets all the morning sun and is great for tender salad greens.

A couple of weeks ago, local musician and friend George Begbie won the Rudy Brandsma Award at the ASA national awards in Sydney. Many of us who knew George when he first started performing were thrilled but not really surprised – he’s always been that good!

And my wonderful singing group at Oak Tasmania are playing at the in-house end of year BBQ this Friday. Rehearsals are getting tighter and more intense, we’re all getting excited about showing off some new skills. I hope there’ll be some photos I can share with you all from that too.

But tonight is my last public gig for 2015.

I’m playing a short set at The Homestead in support of my dear friend Matt Sertori. I’ve known Matt for many years and despite his seemingly irreverent lyrics, he is one of the most thoughtful, intense and inspiring performers around.

There is a misconception that Matt playing solo is just a comedy act but I think it’s important to understand there are two distinct sides to this demanding performer. Listen to his (often scathing) lyrics and look behind the laughter, there are some deep and incredibly serious subjects being dealt with. Here, there is a depth to the writing and an intensity in performance that can be downright confronting.

I am honoured to be playing support tonight for many reasons. Matt is also the man who drew me into the ASA over a decade ago and instigated the supportive, mentoring attitude that prevailed until quite recently. If you’re in or around Hobart I urge you to come and listen to this most fascinating and complex songwriter. And say hello – I love catching up with you all.

A Day of Quiet Bliss – Day 29 NaBloPoMo 2015

It was very overcast and quite humid in Hobart most of today. Although I was supposed to go to an event nearby, I decided to stay home and potter around the garden. The girls were very pleased because this meant lots of extra treats for them and they rewarded me with eggs as usual. Boudica Bunny is also eating enormous amounts at the moment and all the babies are out and starting to get the hang of this eating solid food caper.

I potted up more basil, chillies and Green Shiso (Perilla fruitescans var. crispa), a wonderful Japanese annual herb, which I primarily use in stir fries and salads. I’ve grown it in the past but never had such a fabulous strike rate as I did with this year’s seed supply. It’s looking wonderful and already has that unmistakable flavour and aroma. I find it likes a rich potting mix and lots of warmth for quick growth, similar to basil.

And then there was the completion of half the “corner of shame”. This is a classic before and after situation.

Admittedly, we’re only half way there but that’s a lot further than we were a few weeks ago!

After removing the worst of the perennial weeds, I put some dolomite limestone over the area and covered it with several layers of cardboard.  Then we laid some cotton mats, donated by family members, that were old and worn and heading for the rubbish tip. (I think half our garden is recycled!)

A thick layer of coarse sand went over that and it was topped with some well composted native bark mulch, which I’ve found considerably less acidic than pine bark mulch. We did the same thing behind the chicken house and I’ve planted two Australian Tea-Trees (Leptospermum sp.) there to provide some extra wind protection for the ladies who lay.

The weeds will grow back – but not as quickly or as vigorously as they have in the past. I want to plant a couple of English Lavender here in the next few days and I’m planning to put netting or shade cloth above the fence to give a little more height for growing climbers in tubs and privacy both for and from our neighbours. Next spring, this is the likely spot for my beehive, angled in towards the garden.

I also finished the garlic crop, which has been curing inside the last two weeks. It’s now cleaned up, the tails have been clipped and it’s in three plaits, hanging off the laundry/kitchen door. It’s quite a decent amount this season, considering I’ve used and given away at least half a dozen or so heads already – and there’s more in the ground that needs pulling!

Tomorrow is back to music work and teaching, the beginning of my birthday week, first day of my next university semester and the last day of NaBloPoMo – and I’m picking up my birthday present to myself tomorrow too 😀

 

 

Friends, Gardens & Games – Day 28 NaBloPoMo

After being under the weather the last couple of days, I felt well enough to venture out and go to a friend’s place this afternoon for a birthday barbecue.

I was really tired but glad I went, the young man who was celebrating is a dear friend I met through my son about ten years ago. He lives at home with his married sister, her partner and their two year old son but his mother works in Perth now, on the other side of Australia. (For overseas friends, New Zealand is closer and easier to get to from Hobart than Perth is!)

I love their garden, it’s very different to mine which is primarily a vegetable and fruit garden with few ornamental plants to attract bees and native birds. Also, theirs is a much smaller space and I really like how I can find cornflowers and nasturtiums in the midst of beans and spring onions. They also have a wonderful array of roses, irises and tubs full of colour and interest. I had a great time finding little treasures scattered around the yard, which is sectioned off as garden rooms AND I found another rabbit ❤

My son was there and some other young men I haven’t seen for a while and it was good to catch up with them all. Being a group of gamers (I’ve played D&D campaigns with nearly all of them over the years) we played a cute and quick little board game after dinner called Avalon, which is by the same people who did The Resistance. (Here’s a great little summary by my favourite nerd, Wil Wheaton). I love these kinds of deduction games, with the right group of people they can be hilarious fun. It was lovely to play outside at the barbecue table, especially with good food, great friends and family.

Wild Weather and Gig News – Day 25 NaBloPoMo 2015

We had a reminder today that it’s spring, and really only one small step away from winter. Although it hasn’t been too cold, the temperature is dropping this evening and the wind has been very fierce. And of course, this is the only day this week I had time to go and buy a trailer load of sand and another of composted bark. I’m certain the universe knows these things!

The reason I needed these landscaping supplies is a problematic back corner of the garden. I think everyone with a reasonable sized yard has one of these. That area furthest away from the house that you don’t look at every day, where you’re not sure what to do, everything you plant dies yet weeds seem to thrive! I haven’t done anything with this area for ages, it must be two years since it’s been weeded.

The Corner of Shame

This is what it looked like a few weekends ago – arrgghhh!!! We’d already ripped the Morning Glory (Ipomea sp.) off the fence but the roots are trailing and are difficult to remove. I personally think this is one of the worst weeds in southern Tasmania and if left unchecked it will completely smother vegetable beds, while stripping all nutrients from the soil.

In the middle of this bed is a very old fashioned prune plum, which is a prolific bearer of very sweet, yellow fleshed purple skinned fruit. The tree is old but in good health, despite the competition from blackberries, ivy, mallow and thick clumps of onion twitch. We’ve cleared about half of the area – from the fence up to the bole of the plum. It’s a slow, hard job but we plan to keep chipping away (literally) over the coming weeks, laying thick cardboard and old cotton rugs, covering it with coarse sand and top dressing with composted bark.

Once the bed is finished, I’m putting up shade cloth around the fence to add some height and screen the corner and we’re considering putting a beehive here next year that will face in to the yard. It’s a big job, but like all these things, ultimately worth all the effort.

On another note, I’ve got a gig coming up at The Homestead next month on December 15th, doing a short set for the Australian Songwriters Association. The feature act will be my dear friend, Matt Sertori (of Butterscotch Pony fame) and I’m really looking forward to it. Matt is one of the most interesting performers I know, his lyrics are often insightful and scathing and although he doesn’t do it often, I love his solo shows.

Meanwhile, I’m off to find a jumper, the temperature’s starting to drop. It was 21 C today (about 70 F) and tomorrow we’re expecting 12 C (about 54 F) and possible snow on Kunanyi/Mt Wellington. Typical Hobart spring weather!

The Joy of Little Things – Day 23 NaBloPoMo 2015

Today’s post will be very brief, I’m in the midst of writing an exegesis for a uni assignment.

I know it’s just a little thing but it gave me a tremendous amount of joy. Today I went to Oak to have lunch with my friends before doing a music session with them. I took a salad, as I often do, but today absolutely everything in was grown, made or raised by me – I knew where it all came from 🙂

Eggs from my feathered beauties, sprouts I grew in the kitchen, plus rocket, spinach, basil and kale from the garden. Even the cheese was a feta made a few weeks ago with real milk. And it was all delicious ❤

Making Room – Day 22 NaBloPoMo 2015

Just a short post today, I’m tired tonight!

Because we have relatively mild summers here in Tasmania, I grow chillies and basil in pots in the greenhouse so I get the most out of them. When I first moved here six years ago, this was run down shed, full of weeds and cherry tree suckers and it took six months to get it into a workable state. All of the shelving is timber salvaged from the old shed.

I’ve been doing yet another clean out of the greenhouse the last couple of days, in an effort to make more room. It’s something I go through every spring as it tends to become a storage space in winter. But this year I’ve got more chilli plants already in pots – and a lot more on the way!

So this is what it looks like after today. This is the front half, with a wonderful view to the outside and the main raspberry bed. Inside, there’s Sweet Basil in pots that I’ve already started cropping and two more punnets of Basil seedlings ready to be potted up. The area out of shot holds my eight very productive strawberry plants a storage shelf for plastic trays, tags and toilet roll grow tubes and further left is a bench where I can sit and work.

In this photo there’s also vegetables sizing up for planting out in the next few weeks, including zucchinis, beans, various salad vegetables and about 50 Asparagus seedlings.

At the far end on the top shelf is a tray with approximately eight different varieties of chillies that need to potting up – so many plants!

Following around are mini cucumbers in a tub on the wood chip floor, Garlic Chives about to go out into the garden and my permanent chillies, a Rocoto (Capsicum pubescens), which has beautiful purple flowers and large, very hot fruit and a Scotch Bonnet (Capsicum chinense).  On the lower shelf are three pots of watercress, one of my favourite salad plants.

The top shelf here is more chillies – did I mention my family love hot, spicy food? – Cayenne, Jalapeno, Habaneros and Thai and the last of the vegetables to be potted up. The lower shelf in this photo will eventually be filled with Mammoth, Lettuce Leaf and Thai Basil. Out of shot to the right is a shelf and small cupboard that might end up being more shelving for chillies!

So, that’s my greenhouse – probably my most productive space in the entire garden 🙂

Sunny Saturday – Day 21 NaBloPoMo 2015

I had a really lovely day today. It wasn’t too hot, there was a gentle breeze through the yard and there was lots of gardening to do. Who am I kidding – there’s always lots of gardening to do! Admittedly, I didn’t do a scrap of uni work today but I had such a busy week, I felt I deserved a day off.

It’s wonderful to watch everything grow and change this time of year. In the space of a few short weeks, we’ve gone from buds to flowers to fruit forming on the cherry, apricot, plum and nectarine trees. The strawberries have been delicious and reasonably plentiful despite having only a handful of plants. But this morning we picked and ate the first raspberries of the season.

It was quite a momentous occasion, I think it always is for people who grow their own fruit. When I was a child in South Australia (a far more Mediterranean climate than here in Tasmania), we would pick the first stone fruit – usually early apricots – and my mother would cut it into equal pieces for us all to share and she insisted we make a wish on the first of the harvest. It’s a ritual I’ve continued to this day with my family and whoever happens to be with us when it happens.

This afternoon I started cleaning out the other side of the greenhouse in preparation of the main Basil and Chilli crops. Because the climate here in Hobart is on the cool side, I always grow these in plastic pots in the warmest spot I can find. So far I have all the common Sweet Basil (Ocimiun basilicum) potted up, about 40 plants this year. But there’s Thai, Mammoth and Lettuce Leaf (my favourite for pesto) plus more varieties of chillies ready to go now and nowhere to put them at the moment!

I’ll get it finished tomorrow. Meanwhile, tonight we had the first of the free range pork that arrived yesterday with a salad from the garden, featuring home made feta cheese I made about a month ago. It was a winner all round 😉
