Catching Up With Life

It’s been a busy few weeks!

Summer holidays are only a memory now but it’s been great to be back at Oak, with the added bonus of a belated present from one of the Superstars. Kathryn, who is a very artistic young woman and becoming a capable songwriter, presented me with this gorgeous portrait she did when we had a morning tea break on Friday.

Naturally, everyone knew all about it except me, and I confess I was incredibly thrilled and deeply touched by such an honour. Also, I’m involved in a very exciting new program at Oak – teaching folks how to build a food garden! There’ll be photos and posts in the ensuing weeks but I’ve got some very enthusiastic gardeners on my team and a lovely space to work in 😀

Meanwhile, it’s bedlam here at my place – the house has become a fully fledged work site, with scaffolding surrounding the building in readiness for a new roof and after that, the demolition of an old disused (and potentially dangerous) shed and eradication of many Tasmanian gardeners’ bane – English Ivy. I can’t even park in the driveway at present, let alone think about getting in a load of mushroom compost for the garden beds!

Fortunately, the bulk of the yard has been spared too much disruption, though the rabbits had to be moved away from the ivy infested shed. It’s the start of the annual food glut and I’ve been drying herbs to make my own Tuscan seasoning and I’m starting to be inundated with beans, chilies, basil, shiso, cucumbers, zucchinis and potatoes.

Today I picked more zucchini and discovered some of the “volunteer” Roma tomatoes from the worm farm already had ripe fruit. Because I’m the only one in the house who really likes zucchini, I’ve only got two plants this year, and I think it might be one plant too many! I didn’t pick for two days and discovered a yellow monster this morning! (Don’t be fooled, the tomatoes below are really very ripe but I think the yellow beast made most of them fade in the photo!)

And today is Australia Day. Over the years, this has become a very fraught event for many indigenous people as it really only commemorates the arrival of the British and has been renamed by some people Invasion Day. There is a suggestion that the date be changed and I think it has merit. I think this is an ongoing conversation that we, as a country really need to have. There’s no doubt in my mind that we as a nation are losing much of what my parents and grandparents worked incredibly hard to attain. That is, an egalitarian society that welcomes new voices and a fair go for all.

As a white Australian (and therefore a descendant of immigrants), I don’t particularly like what the day has come to represent, with a lot of incredibly racist slurs aimed at marginalising recent immigrants and people of colour ranging around social media. And our politicians are certainly forgetting about the “fair go for all” aspect that I was brought up to cherish and respect, with increasingly draconian measures to further marginalise this country’s poorest people.

This saddens me so much. Having traveled a little, I know how wonderful this country can be and how grateful I am to live here. So, today I made it my business to think of the original inhabitants while working the soil, the dirt I am steward of. To contemplate the incredibly rich heritage our indigenous brothers and sisters have given us in sight of glorious kunanyi that calmly overlooks all of Hobart – and thank my lucky stars that my forebears (boat people) came to such a beautiful country.

Some Like it Hot – Horseradish Sauce

Happy new year friends everywhere!

I’ve had a really lovely time, pottering in the garden, making things, seed saving and gearing up for a big harvest of potatoes, beans, chilies and tomatoes. Study has been high on my agenda too, and I submitted my first assignment for 2017 yesterday.

The broad bean crop from late spring was fabulous, and while I filched a few for some fresh bean side dishes, I decided to dry the majority for use in soups and stews over winter. It seems the rest of my household DO like these creamy, delicious and very healthy beans as long as they’re not boiled into oblivion – which still seems how most people serve them :-/

A couple of days ago I dug up the monster Horseradish (Armoracia rusticana, syn. Cochlearia armoracia), which was threatening to take over a significant section of the rhubarb bed! This member of the Brassica family is a wonderful herb and fresh Horseradish Sauce is so much nicer than the store-bought stuff. Having said that, it can be incredibly invasive and will grow from the tiniest piece of root.

The roots smell very mildly of mustard but don’t be fooled. As soon as they’re peeled and grated, ally isothiocyanate (mustard oil) is released, which can irritate mucous membranes in the nose and eyes. This makes me cry worse than peeling onions, so I suggest doing this in a well ventilated area and in small batches. Adding a little vinegar, lemon juice or ascorbic acid will immediately stop the production of mustard oil. I also like to add a little salt and sugar to enhance the flavour.

I like to do the initial peeling in a sink full of cold water and put the white roots in a bowl. This ensures that the smell doesn’t get overpowering and that the roots are clean of every bit of dirt. By the way, I recommend only using the newer roots for this, the one in the picture above is ideal but any bigger can be woody. Old horseradish makes very bitter sauce when grated but they’re great for propagating more plants 😀

Horseradish Sauce (Makes 3 1/2-4 cups)

2 cups peeled fresh horseradish, grated (this can be done by hand or in a food processor)

1 1/2 teas salt

1 teas white sugar

1 1/2 cups vinegar (approximately)

a little cold water (optional)

Mix the salt and sugar carefully through the grated horseradish, being careful not to breathe too much of the pungent fumes (I put the extractor fan on when I make this!). Add the vinegar gradually and mix it very well. The vinegar counters the chemical reaction and production of mustard oil.

Naturally, I like it hot but some like it a little less intense so add a little cold water to cut back the heat.

Pot up into clean, small glass jars with screw top lids and refrigerate. This can be used immediately and will keep in the fridge for up to a year

Also, I dug the Red Norland potatoes this morning. The tops had died back so they were ready to lift but the crop wasn’t huge. Mind you, they were planted a little later than I would’ve liked and there were only 12 seed potatoes. I haven’t weighed them but I imagine there’d be about 2 1/2-3 kg in the bucket.

The Pentland Dell, Patrones and Carlingford plants are still green and strong, so I don’t think I’ll be harvesting them for at least another month.

A huge bonus for me was the soil improvement. I like to use potatoes to start new garden beds and this one was spectacular. Prior to the potatoes, I had the rabbit’s nursery hutch over this ground so it had some added preconditioning 😉

The soil was crumbly, dark and fluffy – very easy to get the potatoes out – and it was absolutely full of earthworms. A far cry from the hard, compacted dirt that used to be here!

I’m planning to turn in the mulch, throw on some worm castings, sheep poo and mushroom compost and put more raspberries in this bed during winter.

Meanwhile, I have to think about what to have for dinner. Maybe a couple of Red Norland potatoes with garlic and horseradish butter and a piece of fish on a bed of silverbeet………

Tis the Season

It’s Boxing Day here in Australia, which for me means the true start of summer holiday reading, grazing on leftovers, warm weather (usually) and the start of the Sydney/Hobart yacht race, which I usually don’t watch – living in Hobart I’m usually more interested in the finish!

But surpassing all these things, it’s the first day of the Melbourne Boxing Day test match. This year Australia are playing Pakistan and I’m enthralled already. Two of my friends are at the game and I think one year I’ll have to fork out the money and go myself, though I’m loath to give up my comfortable couch and grazing rights for a hard plastic seat and overpriced snacks!

The yard has been very productive too, there’s been loads of potatoes (and more to come) plus raspberries, strawberries, beans, the start of the cucumbers, the first of the basil and the mandatory salad greens that always grow in my garden. Interestingly, I’ve had some “volunteers” that have done very well the last few weeks.

These Roma tomatoes came from seeds in the worm farm and ended up as fertiliser/soil conditioner when I was planting out the dwarf apples back in late winter. I’ve repotted a few that are flowering but it’s astonishing how well this batch has fared – and with no help at all from me!

The raspberries have been quite wonderful and there’s been a lot of luscious desserts this summer as well as just enjoying them fresh, straight off the bush ❤ We’re not a big jam-loving household but I think it’s worth experimenting and make a little sometimes just to add some variety. So, for something a little different (for me) I decided to make a few jars from the excess. Raspberries are a good source of pectin so jam making is pretty straightforward although there’s loads of warming the sugar before cooking tips and tricks. I’m too lazy for that! Here’s my basic recipe.

Lazy Woman’s Raspberry Jam (Makes about 3 x 300 ml jars)

500 g (1.1 lb) clean, whole raspberries

500 g (1.1 lb) white sugar

1 tab lemon juice

a small knob of butter

Pick over the berries and make sure they’re clean. I find this works best with a mix of very ripe and slightly under ripe fruit.  Put in a large, heavy based saucepan. Gently pour over the sugar and shake the pan to make sure the sugar covers and coats all the fruit. Cover and leave overnight.

The next day, wash glass jars and screw top lids (the “pop-top” kind) in warm, soapy water, rinse in hot clean water. Because we don’t eat a lot of jam, I tend to use small jars for this, nothing over 300 ml. Sterilise the jars in a cool oven and put the clean lids in a small saucepan of simmering water. This jam is fast to make, so I find it best to get the jars and lids done before I cook the jam.

Put the sugar and berries on a low heat and add a tablespoon of lemon juice. Shake the pan gently until the gorgeous raspberry juice starts to show through and increase the heat. Then stir occasionally to ensure the jam doesn’t stick. Bring it up to a simmer and continue to stir. Let it boil for a minute or two and toss in a small knob of butter. (This is a very old trick to eliminate the scum that sometimes forms on boiling jam – and it works with any and every jam!) Test for a set by putting a little on a saucer and letting it cool.

Once setting point is reached take the jam off the boil and put it on a heat-proof surface somewhere convenient and safe to pot up. Bring the sterilised lids in their saucepan to the same spot, a pair of tongs, oven-proof gloves or a tough tea towel handy to grab hot things and a heat proof board to put the filled jars!

With an oven mit or tea towel, get a hot, sterilised jar out of the oven. Carefully fill with the hot jam, which should pour quite easily. I use a small clean china cup for this, but be careful – jam scalds are not fun! Grab a lid with the tongs, shaking excess water off and very carefully screw it on the jar. Put on a heat-proof board or similar to cool slowly. Continue until all the jam is done.

As the jars cool on the board, press the center of the lid to ensure a seal. If the center won’t stay down (which happens occasionally) put this jar aside and use it first. Clean the outside of the jars with a clean damp cloth and label them clearly with name and date. This will store unopened in a cupboard for a couple of years but in my experience it usually gets eaten within a few months. Raspberry Jam will darken as it ages too, taking on a deep ruby hue.

It’s been quite the “annus horribilus” for me and many others but as with all things in life, it’s really what you make it and there’s been some truly wondrous things among  the moments of sadness. Let the Madness Begin! – Day 19 NaBloPoMo

I had a really good day today.

Because I’m back on schedule for my uni assignments, I decided to make the most of the lovely spring weather and spent most of the day in the yard.

There were rabbit hutches to muck out, chickens to talk to and (at long last!) tomatoes to start planting, and later, I did quite a lot of work in the greenhouse.

Around this time every year, life gets a bit crazy for me with lots of summer vegetables that I start from seed. These either need to be either planted out in garden beds (like tomatoes, beans and salad greens) or potted up for growing in the greenhouse (primarily basil and chillies).

This year is no exception, and this afternoon I potted up one of my favourite summer herbs, Shiso (Perilla frutescens), also known as Beef Steak Plant.

I use it shredded in salads and when the leaves are full size, as a wrap for sashimi and even for pickling and drying. I love it’s spicy, fresh flavour. I have a really good and simple pickling recipe here if you’re interested.

To have enough for fresh and preserving, I usually grow about two dozen plants in small pots and keep them in the greenhouse. I use a weak home made liquid feed once every couple of weeks

There was also a punnet of Bergamot (Monarda didyma) that I’m planning to use to attract bees, and add flowers to salads and for tea that yielded a dozen plants, more tomatoes and a punnet of five very healthy Jam Melons (Citrullus lanatus).

These very old fashioned fruit are a real blast from my childhood, when my mother would use a melon to make autumn fruits go much further for desserts such as pie fillings, tarts and of course, Melon and Lemon Jam. The melon is fiddly to seed but once cooked, the translucent flesh takes up other flavours beautifully. I was given the seed by a lovely woman in northern Tasmania and I’m really pleased these grew. I intend to grow the strongest two but don’t have large enough garden beds left to put them in! So, I’m planning to put them in big tubs and let them spill out across what used to be the corner of shame – now well tended pine bark around the plum tree.

It’s a little bit of forward planning (and maybe wishful thinking) but I’m hoping to have at least a couple of melons to use for making the last of the berries stretch that little bit further at the end of the season ❤

Tomorrow I’m potting up the first of the basil – the official start of “basilapocolypse” – and more tomatoes. Next week, some of the chillies will be ready to go. Then things will get really crazy!

Rainy Day Self Care – Day 13 NaBloPoMo

I’ve been really struggling today, feeling physically unwell but also quite inexplicably sad since I woke this morning.

Perhaps it’s the weather. It’s been very wet and bleak almost all day, so I didn’t have much chance to be in the yard. I’ve become very aware of how sensitive I am to such things. So I decided to remain as positive as possible, do things that made me feel better and generally engage in some self-care.

I got out my uber-fabulous rain jacket, found a beanie and went to splash around, feeding the hungry hordes and finding little things to photograph – something that always makes me feel good.

First stop after feeding was to check the greenhouse. Usually by November I need to water fairly thoroughly in there but today it was so damp it wasn’t necessary. I did find breakfast though 😀

I only picked the one on the right and while it was lovely, we really haven’t had enough sunny days to encourage fructose production. I’m concerned the raspberries will be the same too but it’ll be at least a couple of weeks before they start producing significantly. And surely the sunshine will be back by then!

Of course, the best way to cheer me up is to see new things happening and I was very pleased to discover several flowers on the Cayenne chillies this morning. I really love these long, thin skinned chillies. They are great fresh but dry easily and they have a light and bright flavour, that lifts all manner of dishes.

Meanwhile, I decided to make a really hearty slow-roasted organic chicken for tonight’s dinner so I headed for the French Tarragon patch, which is booming at the moment.

This is my take on Tarragon Roast Chicken.

I had some chestnuts left in the freezer that I dry roasted and shelled back in autumn. They were chopped up finely with a couple of the small garlic heads and the Tarragon and thrown in a bowl. I beat in an egg and a little olive oil, and mixed in about half a cup of fine sourdough breadcrumbs to help bind it all together.

In the slow cooker I made a trivet of a halved onion, some small carrots, a few celery sticks from the garden that were too big for using in salads, a few more little garlic heads and the rest of the Tarragon. I put the stuffed chicken carefully on top of the vegetable trivet, seasoned it and poured over about a cup of white wine. Then I put it on low and forgot about it for a few hours.

After some quiet time reading, watching trashy Sunday afternoon television and a long luxurious shower, we prepared potatoes, parsnips and carrots for roasting. Now, this is totally decadent but it was a household decision to add some home made garlic butter to the roasting pan – because fresh garlic!

After the veggies were starting to brown, the chicken was carefully lifted and finished off in the oven with all those lovely vegetables. I decanted off about 3 cups of rich liquid from the slow cooker as a sauce base and made a cornflour roux. A tablespoon of homemade mushroom ketchup and a dash of cream finished off the sauce.

This was utterly fabulous. The Tarragon and garlic shone through without overwhelming, the chicken was succulent but cooked through, vegetables crisp on the outside and fluffy inside, and the stuffing was nutty and rich but not stodgy.

I’m now going into a food coma – but feeling much better than I was earlier in the day 😀

Making Room – Day 10 NaBloPoMo

This will be a short post as I’ve got to get ready for an early set tonight as I mentioned here a couple of days ago and I’m still not absolutely certain what songs I’m going to play. Something short and vitriolic feels kinda right at the moment.

While the world seems to be coming to terms with the US election, I gardened hard this morning. I picked heaps of snow peas, and there’s loads of new flowers and peas coming on. It’s been a wonderful crop and hopefully with last another month or two.

I also ripped out a couple of giant Italian Parsley plants that are going to seed and stripped them for use in the kitchen over the next few days. Then I got stuck into the broad beans in the next bed and picked the largest pods I could find and shelled them into a bowl while the chickens looked on. Again, there’s still heaps of flowers and new beans forming, so this is going to be a good crop. All the parsley heads and bean husks got chopped up and fed straight to the chickens, who are giving us loads of eggs this year.

I’m the only one in the house that likes broad beans as a fresh vegetable but they dry very well, and we go through a lot of dried beans each year in curries and stews to make meat go further. I’ve laid out what I imagine would be a meal’s worth and I’m going to see how long it takes for them to dry out. It could end up being a dehydrator job but at least these will have a start.

Also, I gave up waiting and decided to lift the rest of the garlic. Some of it is a little small but it is what it is – and with the parsley, I want to make that other great Italian garnish – gremolata.  I’m going to experiment with reconstituting some of my dried lemon zest and adding that instead of buying fresh lemons. My lemon tree is flowering but no fruit until next year.

And the big reason to harvest these plants is the amazing realisation that I’m running out of bed space! I really need the room to plant out more beans, tomatoes and zucchinis. It’s hard to imagine that I’d ever run out of space in this yard. When I arrived here (7 years ago next month) the back yard was a huge mess. Many of the fruit trees were diseased and some were dying. What is now the greenhouse was an overgrown shed that had suckers from a cherry tree growing inside and most of the yard was a jungle, with weeds almost as tall as me.

This year’s garlic was in the first bed I made. I remember the soil was impoverished, dry and hard, with little worm activity. After all my layers of compost, mulch and crop rotations, today it’s black, rich and alive. When I first started here it was easy to get overwhelmed by all the mess and everything that needed to be done, but over the years I’ve created 6 more beds plus the greenhouse and got it to the point of producing almost all our vegetable needs and some of our fruit year round. One is dedicated just to asparagus, another just to raspberries and one is in the permanent home of rhubarb and acid-loving berries.

Now I go down the yard and still get overwhelmed by everything that needs doing – and because of all the rain the weeds are out of hand again and the grass is tall – but that’s good for the rabbits and there’s food to pick while I consider my options 😉

New Traditions – Day 3 NaBloPoMo 2016

I’m writing to you with the smell of new bread baking in the kitchen. It’s one of those things that spells “home” to me though my family weren’t into yeast-based cookery when I was a kid. We had bunches of dried herbs, cured meats and always pickled onions. I also remember the rows of Fowlers Vacola preserving jars (the Australian equivalent of Ball Mason canning jars) full of bottled fruit that my parents would put by every summer so we could eat apricots and peaches in the middle of winter.

I still put food by, it’s a deeply ingrained habit that I doubt I’ll ever fall out of love with. Instead of bunches of herbs hanging (and the luxury of a walk in pantry) I have new traditions – a dehydrator, a set of tall stockpots and a thermometer for water bath processing and a ragtag assortment of jars that I routinely wash, sterilise, fill, process, store and use.

My “pantry” is a bookshelf with a curtain to cut out the light and here I keep my preserved cordials, bottled and dried fruit, basil and lemon oils, homemade apple cider vinegar, bread flour and spare egg cartons. At the moment it’s mostly empty jars. There’s no bottled fruit left, one lonely roll of fruit leather from last summer, some pickled and dried chilies from the autumn harvest and a few bottles of sauce, fruit cordial, basil oil and flavoured vinegar.

To this day, I’m not sure why we never made bread when I was a child. I suspect with six of us in the house when I was young, it would’ve been much easier and less time consuming to buy bread than make it! My mother was a wonderful baker and I learned many delicious cake and biscuit recipes from her. Every Saturday was baking day and after lunch, the kitchen table would be cleared to make enough biscuits and small cakes for the coming week. In winter there would also be a few dozen Cornish pasties that would end up reheated as lunches, a savoury Pasty Pie and at least one large cake for the weekend and any visitors that might call in.

For those of you who’ve followed my blog for a while, I have a “pet” sourdough plant I named Wee Beastie. She lives on a shelf in the kitchen, where she watches everything that goes on and demands feeding daily. I started her off on new year’s day 2015 so she’s approaching her 2nd birthday.

This living culture requires no other yeast and is a wonderfully frothy mix. My basic recipe is roughly 2 cups of Wee Beastie, 2 cups of strong bread flour, 2 teaspoons of bread improver and some olive oil to stop the dough getting too sticky. Sometimes I add half a cup of rye flour and add a couple of tablespoons of water so the dough is fairly soft. Once this is knocked together in a bowl I turn it out onto my wooden bench and knead it thoroughly for about 5 minutes. Then I make it into a loaf shape, coat my hands in olive oil (about a tablespoon) and massage the oil into the loaf, putting it in a bread pan to prove.

I’m essentially lazy, so it only gets one chance to rise. Normally, I knock the loaf together in the afternoon, leave the dough to rise overnight and bake it the following morning. The results of this slow process are pretty spectacular and incredibly delicious!

Even when it’s a few days old, this bread makes the best toast, perfect with a poached egg  ❤ I’ve even sliced it very thin and toasted it for an alternative to bought crispbread.

Meanwhile, I have to go. There’s an essay to write and (in the name of science) fresh bread to taste test 😉

 

Strange Days – Autumn 2016

In light of all the sadness of recent times, I thought I’d give an update on the urban farm. Along with music, writing and all my magnificent friends, this has undoubtedly been the glue that’s been holding everything together these past months inside my head.

I’m grateful not only that I have these things in my life but I recognise and celebrate their importance.

As I type, we’ve finally had some rain but it has been a very warm and dry autumn for southern Tasmania. In years past, the Prune Plum pictured above would be bare stems by now but early May and it still refuses to drop its leaves!

Elsewhere around the garden there’s other odd things happening……

The picture above is some of my Raspberries that really shouldn’t be producing this late in the season – they are generally a summer only variety! And in the greenhouse, I discovered Strawberries and new flowers and fruit on many of the chillies!

One of the better things about this protracted warm weather has been the amount of growth in the vegetable garden. I’ve been literally inundated with chillies this season and they’re not letting up – some of the well established plants are still flowering and setting fruit!

At the moment, I’ve got the dehydrator packed with the last of the Roma tomatoes and various chillies and the basil is just crazy! The winter broccoli is starting to head and there’s plenty of growth on the Silverbeet (Swiss Chard) and the winter Endive and Chicory plants are almost ready to start picking. The Asparagus I grew from seed over the summer is looking positively lush in its permanent bed, producing lots of surprisingly large feathery fronds before winter bites. My big fear at the moment is that all the Kale I’ve planted will bolt to seed before it’s big enough to pick!

I’m going to do a last big cut of Rhubarb this weekend and cook it up for winter desserts. Then, once the plants shut down for winter, I’m going to dig all the crowns up and divide them. For any of you in Tasmania, contact me if you want a Rhubarb crown – I’m happy to barter 😀

They’re three weeks old now, their eyes are open and they’re out “exploring” (read constantly annoying their mother). In truth, I’d given up on Bella being pregnant (this was the second time she’d been serviced by our lovely buck) and I’d even put her back in her regular two tiered hutch near the others in preparation for winter. She is so big it’s really hard to tell if she’s pregnant anymore!

Then my gorgeous neighbour Karen came up early Saturday 16th April to let me know she found a little pink, blind newborn outside Bella’s hutch. (She is now officially the Best Neighbour Ever!) We all raced out to find two in a nest Bella had made in her upstairs sleeping area and about four more in the bottom of her hutch. They were cold so it was all hands on deck! Normally, I don’t like to disturb or touch newborns until they have their fur but we had little baby buns up our jumpers (I even had one in my bra) to warm them while we carefully checked the rest of the hutch and made sure Bella was alright. Last weekend we moved them all back into the ground level nursery hutch and everyone’s thriving 😀

Tuesday we had the first snow on kunanyi/Mt Wellington for the year and I went to Launceston on Wednesday to attend a memorial service for Kevin Gleeson, who passed away recently. While it was great to catch up with many friends, it was a very sad day. When I was driving up, I noticed deciduous trees (looked like Prunus sp.) budding up and flowering – strange days indeed!

Autumn Love

So, it’s March and I keep wondering where summer went. But it also heralds the beginning of autumn, undoubtedly my favourite season in Tasmania.

After the recent sadness of my friend passing away, I channeled my “inner Jeff” and got busy. One of his maxims was “activity with a capital A”, so last weekend I went and visited a dear friend who’s also a fabulous gardener. Her style is inventive and eclectic, mixing old fashioned cottage garden standards with some quite unusual ornamental plants as well as vegetables, fruit and a healthy frog pond in a smallish suburban backyard. Added to that, she’s divided her space into distinctly differently garden “rooms”, perfect for entertaining, reading or just lounging around. It was lovely to hang out with her and enjoy the garden.

Before I left, we picked a shopping bag of elderberries, which I must say, hardly made a dent in her magnificent tree! In Tasmania, the European elderberry (Sambucus nigra) has become something of a weed as it suckers readily and birds spread the seeds very readily. Nevertheless, the elder is prized for wine making and medicinal purposes, both for the delicately scented flowers in spring and the rich, purple/black berries in late summer and early autumn.

I wanted to make a medicinal (and delicious) cordial for winter, and once I got my bag of berries home, I had a great time stripping the fruit and making a mess. The shopping bag yielded over 2 kg of ripe berries! And finally, I recommend wearing old clothes when doing this – elderberries stain everything!

Elderberry and Cinnamon Cordial

Elderberries             Water                 Sugar             Cinnamon quills           Lemons

Use a fork to ease the ripe berries off the stalks. Remove any stems, dead flowers or insects and put the berries into a stock pot. Put enough cold water over to just cover the berries. Bring it to a gentle simmer and cook, covered for 20-30 minutes.

Use a potato masher to thoroughly break the fruit. Strain the liquid off and measure carefully into a clean jam pan or stock pot. (I used a fine mesh nylon strainer but a jelly bag or muslin would do just as well. Don’t be afraid to squeeze the pulp to get all the juice out.)

For every cup of juice add a cup of sugar and Âź cup of lemon juice (preferably fresh) and for every three cups, add a whole cinnamon quill.

Cover and leave this mixture to steep, preferably overnight.

Next day heat the syrup gently and stir to dissolve the sugar. Pot up into sterilised bottles and process in a water bath to prolong storage.

To use, mix approximately a tablespoon of syrup with cold water and ice or soda water. It’s also great as a hot drink – just boil the kettle and use a tablespoon or so in a cup – incredibly warming and delicious on a cold day and one of my “go to” drinks when I feel a head cold coming on.

My household aren’t huge jam eaters but there was so much pulp, I couldn’t bring myself to waste it! So, extended family and jam-loving friends have all done well from this 🙂 Also, to my delight I discovered that a tablespoon of the jam in a serve of plain homemade yogurt is absolutely delicious!

Elderberry Jam

Elderberry pulp               Sugar                   Fresh Lemon juice and grated zest

Lemon Balm (optional)       Jamsetta (optional)

Measure the pulp and for every four cups, add three cups of sugar and a small bunch of lemon balm in muslin if you have it on hand. Heat gently in a jam pan and bring up to a simmer. Elderberries are low in pectin so if setting point is not reached, use a commercial pectin. Add the zest and juice of two lemons.

Gently boil the jam to a setting point and test.

Pot up into sterilised jam jars and cover immediately.

Chinese New Year – Spicy Plum Sauce

It’s been a while since I’ve posted anything, it’s been quite chaotic! As we glide into the back end of summer here in Tasmania, I’ve been busy planning beds for winter vegetables, planting for autumn harvest, cropping the summer bounty, making feta cheese, dispatching the most recent rabbits (filling the freezer again!) and making sure our second doe (the beautiful Bella) is pregnant with another litter for autumn eating. My cupboards are full of cordials, flavoured oils, vinegars, dried fruit, and even home made Furikake, thanks to a brilliant crop of green shiso in the greenhouse this year. (Leave a comment if any of you are interested in a recipe for this).

Since the corner of shame has been revived, ready for a beehive later this year, the plum tree has loved all the extra attention and yielded a decent crop. As I write there’s three huge trays of plums in the dehydrator becoming prunes for use over winter and a couple more big bowls to do things with. Chinese New Year is coming up on Monday so I’ve decided to make Spicy Plum Sauce with 2 kilos of fruit.

I only make this every couple of years as my household aren’t big sauce or chutney fans but it’s a wonderful addition to stir fries, a marinade for barbecue chicken or rabbit and is fabulous as a dipping sauce with spring rolls, dumplings or just about anything! Also, we are all chilli lovers, so if you’re not as keen on the hot notes, adjust the number of chillies, remove the seeds, try a milder variety or even omit them altogether. Some of my treasured Habanero chillies got sunburn in the greenhouse while still green a couple of days ago, and this seemed an ideal use for them. I personally feel it’s important to make any recipe your own, rather than following someone else’s to to absolute letter. So this is my take on Spicy Plum Sauce this year – go and make it yours 🙂

Spicy Plum Sauce

Ingredients:

2kg plums     1/2 cup soy sauce      1/2 cup Chinese cooking sherry   2 cups cider vinegar or white wine    1/2 cup brown sugar    1 red onion, finely diced    1 tab grated ginger      3-4 cloves garlic      6 habanero chillies, finely chopped

In a small square of muslin:  1 cinnamon quill    1 star anise     2-3 allspice berries   1 tsp cardamon pods   1 tsp coriander seed

Method:

Tie the spices in the muslin and hang off the handle of a stockpot. Halve and pit the plums, add them to the stockpot with the sherry, onion, ginger, garlic and vinegar or white wine. (If you like the sauce sharp, use vinegar).

Simmer it all together, stirring occasionally. Once the plums are starting to soften add the chopped chillies. Cook until the plums are falling apart. Allow to cool (I left mine overnight) and remove the muslin bag. If you like your sauce smooth, pour into a blender jar and blend thoroughly. If you like your sauce chunkier, use a potato masher or the back of a wooden spoon.

Reheat and pot up into sterilised glass bottles (or jars if it’s chunky) and process in a water bath for extended shelf life.
